So, Firefox is semi-broken on my computer and I have no idea how to fix it. Yup, I’m an idiot.

Anyways, the problem: I can “favorite” or “bookmark” ANYTHING. Not. One. Thing.

Alright, I’m bored. I’ll post more later. It is for my own benefit.

Ok, so I’m lying. I don’t actually have a single favorite breakfast. But I do have a few different breakfasty meals (I’ll really eat them any time of day) that I especially enjoy and eat most often.

Some think I’m weird for liking to eat this at 8am every day, but I simply can’t be worried about that. I’m gonna eat what I like.

I give you: Egg Salsa Scramble over Wilted Spinach

Eggs and Spinach

Is it not beautiful? Ok, so maybe it looks like a mess, but its a delicious mess, trust me.

This is super easy to make and super delicious and super nutritious. A triple threat!

I separate three egg whites, just a few drips of yolk for a bit of healthy fat and iron (compost the shells and extra yolks!) and then a splash of organic skim milk. Sometimes I’ll add mushrooms or peppers or scallions (or all three) to the mix, but mostly I just make the eggs. This bowl was actually a lunch so I added some mushrooms and broccoli (although I ate more than half the broccoli that I had steamed before the eggs were ready :D ).

I zap them in the microwave to about a minute, stir them up, zap them for another 45 seconds or so and they’re done! 

I then add some oregano and dump them over a bowl of baby spinach. To top it off I slop on a big spoonful of Newman’s Own Organic Chunky Salsa (sometimes two) and its ready to eat! 

Sometimes I heat it up for another 30 seconds afterwards if the spinach isn’t as wilty as I like it, but mostly I just enjoy every last bite :D .

Now, this lunch bowl in particular I ate around 1 so rest assured it will be followed by a heaping cup of raspberries (awesomeness) and a skinny cow ice cream sandwich (also yummy). Oh, and some new coffee which I will be reviewing soon!

Well, its sunny here in the NE so I’m assuming its like that everywhere else haha. Get outside and enjoy the sun!

After four days in NJ with A, it’s time to get back on track.

My body was definitely not used to eating the way that I did down in the Jerz and my system is a little out of wack. I had rice at nearly every meal and a heck of a lot more sugar (especially in the morning), which for me is a big deal. In fact, for me the past four days have basically been a plethora of carboloading. I really prefer whole grain cereals and oats to rice and pasta so I find I can’t eat as much grainy stuff since its so filling.

This calls for a couple of days of superclean eating…with the exception of a pretty normal amount of coffee – I won’t lie, I missed my Green Mountain!

For today, however, I just got home and ate whatever – a complete mish mosh of things (and not particularly healthy things either…oops). 

But tomorrow is a new day…a full one at that. So I’m making one of my to-do lists to make sure I get everything done :D .

  1. Wake up early to work out – stationary bike or elliptical; some yoga
  2. Unpack
  3. Clean out clothes that I don’t wear from dresser and closet (long overdue)
  4. Grocery shopping (if I have the car)
  5. Second work out at gym (if I have the car; I haven’t had a good work out since Wednesday so I’m really hoping to get a lot of exercise tomorrow)
  6. Job searching
  7. Dishes, laundry, general housework
  8. Continue reading! (I had to put in a fun one :D )

Speaking of reading, since my train ride was three hours long, I had a chance to read A LOT both while I was on the train and while I was waiting for the train to arrive (I was at the station for about and hour before it came). Having said that, I’m over halfway done with Northanger Abbey (via DailyLit.com) and I’ve gotten even further into the third part of Emma

Reading on the train wasn’t the best because there was some general noise which kind of distracted me at times, but all in all I was really happy to have some good reading materials and finally just get to focus on them. I tend to get so distracted by everything around me that I can’t focus on one thing at a time. I know, ADD much? But I can’t help it!

Ok, so I think this is a substantial enough post. I’m just waiting to watch the Season 2 premiere of True Blood! I know I’m a dork, but whatever. I can’t wait to see what happens!

Despite all the great reads being emailed to me via DailyLit.com, I’ve been reading this non-stop for the past two days. One word: obsessed.

Even though I’ve been reading HEAB for a couple of months now, I hadn’t ever read the posts from the first few months of its existence, so yea…I took care of that. :D

I freakin’ love this blog. I used to be resistant to the whole blogging thing, but I feel that it’s pretty much standard in today’s society and I enjoy reading and writing myself so…why not? Not only am I often entertained by them, but I also learn a lot!

Now, I love my variety of blogs, but between HEAB and Yoga is Yummy I’m set. Any one that makes me feel that I’m not alone in terms of eating habits brings me joy. Not only that, but I’m seriously considering taking my self-taught, internet-learned yoga to the next level by taking an actual class. The only thing holding my back is unemployment… :(

Anyways, I plan on hitting the sack early (for me) so that I can get a bright and early start since I’m leaving for New Jersey tomorrow to visit A!

Of course I haven’t packed anything yet (don’t worry, I’ll lay it out tonight and pack it in tomorrow) and I’m hoping to get in a quick cardio work out on the stationary bike and a nice, protein packed breakfast in preparation for my three hour train ride tomorrow. We’ll see how it all works out.  I kind of have a bad feeling about this though….ok now I’m paranoid…and I’m gonna go pack!

Can’t lose the motivation, sorry for the short-cut post! I’ll write again when I’m back Sunday :D
